Best New Restaurant In Calvert County

Dear Friends,

Something special had happened in North Beach. A great local chef has converted a lovely old house on 7th street into a fine restaurant called the Bilvil, a beaches cafe.

Think for a minute how brave he must be, now, when the economy is tanking - "We're so poor we got married for the rice." How dedicated to his craft to bake the bread fresh every day - this is not your cardiologists diet; "If it tastes good, spit it out." And how caring he is, to buy the healthiest, freshest food from local gardeners, farmers & watermen.

Lane and Tom Heath told me, "We had a lovely dinner there. I had the fish and Tom had the roast pork. They were both really good. And the wine selection was excellent."

True, he doesn't watch our calories. You won't lose weight, but take a piece of his grandma Caldwell's carrot cake with you. Beth Barnes wrote, "What you eat standing up doesn't count." If you're really on a diet, stop by anyway and order the Erma Bombeck dessert: "One of the ingredients in my new diet is a picture of a cookie."

The attitude is "Whoever smiles the first wins" in his spotless new kitchen, where he creates rich, hearty, nourishing dishes and oversees every aspect of their preparation and services with great charm and humor.

And this is a winner. The Bilvil, a beaches cafe is at 4114 7th street. It's a few feet from the Bay, snuggled in among antique and gift shops, and close to plentiful parking. Trust me you will soon need reservations. Bil's Phone is (410)286-7214.

Hours of Operation

5pm - 9pm Monday, Wednesday and Thursday

5pm - 10pm on Friday and Saturday

2pm - 8pm on Sundays

Closed on Tuesdays

P.S.

Bil's saves the parings and peels and seashells for my compost pile. I am growing him lots of organic herbs ad vegetables. I can't wait for summer - to taste what was my mom's favorite from her garden - ground cherry pie.

As Mama used to say, "Coffee's o. Come on over.... You are all going to love this!"

- Suzi
